Welcome Fall….it’s time for Slow Cooker Beef Stew (Recipe)

I don’t eat beef. Or pork. But, my family does. It’s only fair that I cater to what they like on a weekly basis (not daily). It sure wouldn’t be fair if I made them eat chicken and fish every single day.

There’s a long running joke about beef stew in my house. My husband is not fond of it. He says when he was a child, back in England, his mum made him eat beef stew all of the time. Now, I find this abit dramatic and I’m sure she would too but whatever. During one of her last visits over to the States , she made stew. There was still some left over once she returned home and when the kids weren’t looking…..the Mr. added a great deal of hot sauce. He says he was “giving it flavor”. Now the kids will say, “remember that time you ruined nanny’s beef stew?”

I thought it was time to make my own my stew for them. It was so easy and a huge success. My husband did ask if he could add hot sauce and I promptly told him “NOT without trying it first!”

Ingredients:

Stewing Beef-I used 2 value packs of stew meat which was around 2lbs per package. It’s not necessary to use as much as I did.

1 can of no salt diced tomatoes

2 cups of beef broth

1 1/2 teaspoon of italian seasoning

2 carrots-chopped

5 large potatoes-chopped

1/2 bag of frozen corn

1/2 bag of frozen peas

1/2 teaspoon of salt

1/2 teaspoon of pepper

 

In a skillet on the stove top, brown the beef. I didn’t cook thoroughly as I didn’t want the meat to become tough once added to the slow cooker.

In your cooker, add the diced tomatoes, beef, broth, italian seasoning, carrots and potatoes. I chose to cook on high for 3hrs then low for 1.5hrs. In the last 30 minutes, add your corn, peas, salt and pepper.

And voila. That’s it. You have beef stew. My kids AND husband loved it. So glad we have a winner and there is a more positive light shining on stew in my husband’s eyes.
