A Taste of Home: British Pies and Foodie.com

In honor of Pi Day which is March 14th, I teamed up with Foodie.com to provide a collection of my favorite British Pies and those my family would like to try.

Lately I have really been getting into creating dinners to give my husband a little taste of home….which is England for him. Last night I made Cottage Pie and let’s just say everyone went back for more. I did put my own spin into it after trying other recipes in the past. I think my family, especially my husband, is happy with my version of cottage pie.

Ingredients:

1 package of ground beef (I used ground turkey!)

4 carrots finely chopped

1 cup of peas

1 clove of garlic

1 small onion

1 teaspoon fresh thyme

2 tablespoons fresh parsley

2 tablespoons olive oil

2 tablespoons Worcestershire sauce

1 1/2 cups of beef broth

1 tablespoon tomato paste

1 tablespoon Italian seasoning

1/2 teaspoon cinnamon

2 tablespoons all purpose flour

Brown meat in the olive oil. Once thoroughly cooked: combine the flour,onion, garlic, carrots, Worcestershire sauce, beef broth, tomato paste, thyme, parsley and seasonings in the pan with the meat. Simmer for 20 minutes. Add peas and continue to simmer for an additional 10 minutes.

Transfer meat filling to baking dish.

Mashed Potatoes Ingredients:

4 large potatoes

4 oz cream cheese (I prefer fat free)

1/2 cup skim milk

3 tablespoons of butter

1/4 cup of cheese (I use a mixture of mozzarella and cheddar)

salt and pepper to taste

Directions:

Boil the potatoes until tender. Add the remaining ingredients while mashing the potatoes until you reach a smooth and creamy consistency.

Spread potatoes over meat filling.

Bake at 350 degrees for 25 minutes.

And there you have it. That’s the Pretty in the Queen City version of Cottage Pie.
