Valentine’s Day Dinner Recipes

Valentine’s Day is only nine days away. While I may be stuck at the soccer field that day, I know many of you are planning romantic evenings with loved ones. I’m a girly-girl so of course I am into all of the lovey-dovey things. But let’s be realistic, it really is a ‘Hallmark Holiday’. It’s difficult to find cards or chocolates last minute. And it’s definitely difficult to get into any decent restaurant at the last minute.  But why put yourself thru that? Isn’t Valentine’s Day about showing the person you’re with -your love for them? Why not plan a nice quiet romantic evening in? Personally, I gravitate towards that idea more than anything (assuming I have a babysitter! ha!) . Staying at home to cook for your loved one or even making it a team effort is a wonderful way to reconnect and spend quality time together.

Here’s a recent recipe I made that was a huge hit with my husband. It’s easy and SO tasty. Even better? It’s actually really healthy.

 Balsamic Mozzarella Chicken

2 Chicken Breasts

2 Tablespoons Balsamic Vinegar

Italian Seasoning

2 Slices of Fresh Mozzarella

2 Fresh Basil Leaves

2 Slices of Tomato

Balsamic Glaze

Directions: Add chicken and balsamic vinegar to a plastic bag. Toss well to coat evenly. Place coated chicken in baking dish. Season with Italian Seasoning. Bake at 350 until cooked thoroughly.  Top with mozzarella, basil and tomato slice. Drizzle glaze on top and serve.
