It’s chilly outside and everything has been branded ‘Pumpkin Spice’ . That can only mean one thing. It’s FALL! Some of the best recipes come out of my kitchen during this time of year. Comfort food!

Lately I’ve been trying to provide meals for my family that are under 500 calories. All are healthy and all are YUMMY. It’s actually been fun for me to try to find and create recipes that my family will love that are healthy. The latest meal to come out of my kitchen-Spicy Turkey Cheeseburger Casserole.  Perfect for this fall weather. I’ve seen quite a few versions of this online however I’ve put my own twist into this recipe. Best part about it-besides it’s tasty and my son LOVED it? It’s under 500 calories per serving. The recipe is provided below.

Ingredients

2- 16 oz boxes of Rotini

2 packages of ground turkey

2 tsp olive oil

1 1/2 Onion Chopped

2 cloves of garlic chopped

4 tbsp of tomato paste

2-10oz cans of mild diced tomatoes

3 tbsp of dijon mustard

6 tbsp of fat free sour cream

2 cup of low fat shredded cheddar cheese

1/4 cup of chopped dill pickles

Salt & Pepper, Basil and Crushed Red Pepper for seasoning

Directions

In a large pot cook the rotini per the directions on the package. Then drain pasta.

Heat the oil on the stove top. Brown turkey meat . Add onions and garlic. Stir in the tomato paste and diced tomatoes. Add the mustard and 3 tbsp of sour cream. Season with S&P and Basil. Allow mixture to simmer until sauce begins to thicken.

Remove the meat mixture from heat and combine with the drained cooked pasta. Mix in the remaining 3 tbsp of sour cream.

Transfer the pasta/meat mixture to a baking pan. Season with Crushed Red Pepper and top with cheese.

Bake at 350 degrees for 15 minutes. Remove from the oven and top with chopped pickles.

I served this pasta with salad. Please note-the measurements above will serve approx 12. I usually make extra servings as we are always on the go with soccer and horse riding . My son will probably be having some again today before practice. One thing I’ve learned with a 13 year old athlete….they never stop eating! 😉
