Fresh and Colorful Spring Salads

What I love about this time of year other than warmer weather is fresh Spring Veggies that become available. My family loves salad. Most days we have salad with our dinner and some days I create a salad bar so we can enjoy a nice big COLORFUL and HEALTHY salad. I’m pretty lucky that I have 3 kids who love vegetebles the way mine do. My son can sit and eat cucumbers whole. They are his favorite.

When I create a salad bar, I typically include cucumbers, mushrooms, peppers, tomatoes, carrots and of course the lettuce. As seen above, I’ve also added chopped chicken and fruit including blackberries, strawberries and grapes. My family loves this because they can choose what they want to put on their salad. I also like to add other things such as eggs and nuts. Tuna is another great option!

To me, the more colorful the salad….the better….the tastier.

When the season changes, so do some of the vegetables that are available. What’s available this time of year? Well….to name a few: Asparagus, Broccoli, a variety of lettuces, green beans, peas, corn, avocado, fennel, radishes and watercress. This gives you the opportunity to really bring a variety of tastes and COLOR to your kitchen. But keep in mind….many vegetables that aren’t in season still can be purchased in other forms such as frozen. I don’t find that to be as good though. I prefer FRESH.
